Chandni Sen Sinha is a registered dietitian nutritionist based in the San Francisco-Bay Area with a decade of successful experiences spanning across multiple settings, including clinical dietetics, food service, corporate, food regulations, long-term care, acute care, and private practice. Chandni currently works as the Regulatory Affairs Associate at Safeway Inc., Albertsons Companies leading the Fresh Category (Meat, Seafood, Produce) from a regulatory standpoint. Her responsibilities broadly include ensuring that food labels and packaging are compliant to the federal, state, and local regulatory requirements. She works closely with cross functional teams to evaluate product characteristics, validate product claims, accurately label allergens and nutrition facts in accordance with the FDA, USDA and other government agency regulations. Her hobbies include biking, hiking with her dog, Bruno, playing the piano and traveling across the world exploring the diverse cultural food scenarios.

Present the changing dynamics in the world of regulations in the food industry—its challenges in the current set up.
The information available on food packages today is beyond just a simple depiction of a food logo or picture of the product and slogan. The abundance of nutrition and health facts that manufacturers provide on food labels makes it challenging for consumers to comprehend. As the regulatory environment is continuously evolving, it has become even more complex with topics such as clean label, “Added Sugars” requirement on Nutrition Facts Panel (NFP), declaration of sesame as an allergen, requirement to provide bioengineered (BE) food information, plant-based meat alternatives and more. Thus, consumers end up spending extra time in the supermarket aisles trying to digest it all and finding a healthy choice of product. Registered dietitians are uniquely positioned to empower people to make healthful nutrition choices. This webinar may help explain some of the information available on food labels, the laws regulating these labels, the oversight process to ensure proper labeling and the limitations of such oversight.
Learning Objectives:

1. Identify the US government agencies responsible for regulating food labels.

2nd Annual Global Cuisine Series
February 3rd - March 10th, 2022
The Culinary Nutrition Collaborative's "A Taste of Culinary Nutrition from Around the Globe" returns this February 2022! We will be covering 6 new food cultures, including: Mexican, Guatemalan, Russian/Ukrainian, Ethiopian, Korean, and Haitian. We welcome RDNs, health professionals, chefs and nutrition students to participate in a series of virtual workshops covering a selection of food cultures from around the world through the lens of culinary nutrition. Join us as we continue to diversify our plates and our palates and most importantly, enhance our knowledge as practitioners of a diverse population.
Each session will be led by a different chef/RDN who will present important aspects of their food heritage in a cook-along style demonstration for participants (cooking along is optional). Presenters will cover key ingredients and food traditions, as well as concrete recommendations for healthy recipe modifications without compromising the cultural significance of the dish.
A ticket to this series includes registration to 6 interactive culinary workshops held weekly on Zoom on Thursdays at 6-8pm ET from February 3rd until March 10th, 2022.
The entire series will be recorded for those who can't tune in live and the series is approved for 12 CEUs!
