Requirements:

· Registered Dietitian or Eligible to sit for the Registered Dietitian Exam (with DI Verification Statement)

Responsibilities:

· Provide in-services on a quarterly basis and as needed to food service staff

· Development of menus that are up to state regulations, nutritional requirements and within budget

· Development of standardized recipes that coincide with the menus

· Attend food council meetings for input on menu development/adjustment

· Review/develop facility policies and procedures to ensure compliance with NYS Sanitary Code

· Train food service staff on policies and procedures and QA programs

· Review and development of menu extensions (therapeutic and mechanically altered diets)

· Work with food service directors to reduce costs and improve outcomes

· Sign off on menu substitution log to ensure compliance with regulations

· Clinical dietary consults & resident education

· Update Service Plans as needed

· Conduct sanitation audits to ensure staff are following policies & procedures in accordance with New York State Sanitary Code

· Conduct diet order audits to ensure compliance of diet orders and food allergies
